Sunflower shoots have a "nutty" flavor. You may find a few hulls still attached to shoots - these are edible also, or you can gently shake or pull them off.
Drizzle on a little dressing and add sunflower seed for a sunflower salad. Or add shoots to a lettuce or spinach salad. Also great in stir fries, sandwiches, burritos, pitas, or with any kind of eggs.
